Chefs Brandon Greenwell and Daniel Robles, based out of San Diego with Jetty Extracts, take the extracted CO2 Carboxylate oil and create an alternative edible that is delicious as well as nutritious. Using organic ingredients the result is a vegan friendly medicated mayo/ and or ponzu sauce that is then mixed with the appropriate fish. Each piece of sushi is carefully dosed to a standard of 2.5 mg; however, the dosage is customizable to the consumers desire!
